A Warming Recipe to Try This Winter

While South Florida is typically mild during the winter months, we can still enjoy delectable warming recipes like hot cocoa and soups. This creamy chicken and dumpling soup combines tender diced chicken, fresh veggies and doughy dumplings in a comforting broth and is sure to get you and your loved ones in the holiday spirit, despite warm temperatures!

Creamy Chicken and Dumpling Soup

Serves 12


For the broth:

2 pounds of chicken, diced

8 cups chicken broth

2 cups milk

1 cup carrots, chopped

1 cup peas (fresh or frozen)

1 cup peeled, diced potatoes

1/4 cup chopped white onion

1 teaspoon salt

1 teaspoon pepper

1 bay leaf

For the dumplings:

2 cups flour

4 tsp baking powder

1 teaspoon salt

1/4 teaspoon pepper

1 large egg

2 tablespoons melted butter

1 cup of milk, or enough to make the batter stiff and moist


Combine all ingredients in a large pot. Add the broth and bring to boil. Reduce heat and simmer for the time it takes to prepare the dumplings. Prepare the dumplings by mixing all ingredients. Uncover broth, remove the bay leaf, and increase to a gentle boil and let simmer for 5 minutes. Drop dumpling batter by spoonful into the soup. Cover and cook for 20 minutes. Serve and enjoy!
